Plywood as interior cladding and air quality

I am building a small shop/multipurpose building and am considering plywood as the interior cladding. If it’s done right I like the clean look and I would be able to DIY it having woodworking skills but never worked with drywall.
My main question is about indoor air quality. Do need to look for a specific grade that will not be off gassing harmful chemicals? Or are they all pretty benign? thanks
