Insulating garage and laundry room in Florida (Concrete blocks and wood)

I am looking to insulate my garage and adjacent laundry room. I will buy insulated garage door as well. I am in Gainesville, FL, just installed tiles and painted, using now an AC window unit (open to install a AC mini-split after insulation is performed). I would like to keep it at no more than 78-80 degrees in summer. Using infrared gun, today (mid-day) temperature went up to 88 deg, concrete block wall temperature was 94, wood temperature was 90, ceiling was 96. Definitely non insulated. Got a $750 quote to insulate attic with R-30 blown fiberglass ($500 for R19). They wont do blown-in insulation in walls. Part of wall is concrete block (in laundry) part in wood (garage). I am looking for another company for the walls. What do you suggest me? Options I found online are: spray-in spray foam, blow-in Soy-Foam, blow-in Air Krete. Air Krete has some appeal, see this forum (https://www.houzz.com/discussions/5285600/insulation-ever-heard-of-air-krete) and this article. What do you guys suggest me for the walls? Is R30 overkill for ceiling and should I maybe go for R19?
