Insulating existing metal roof on shed converted to tiny home

We are converting shed to tiny house. Metal roof with house wrap is all I see above rafters. I’ve read about air gaps and I understand concept. I have foam board but I need to know what to put up first in open cathedral kitchen and what after that and which way the foil side needs to face

It's often difficult to weatherize buildings that were not built to be weatherized because there's no space for the four layers of the building envelope.
