Increasing insulation value in cathedral ceiling

For adding a boost to cathedral ceilings I have read about making the rafter space deeper by scabbing down. I have always imagined this parallel with the rafters. I am curious if anybody has tried going perpendicular? My only thought is by doing this you could reduce thermal bridging. I am not a builder so maybe there are barriers to doing this.

    People do it all the time.

    Depending on just how much of a boost you are trying to achieve, continuous rigid insulation on the interior (without adding any framing depth) can be an option.
