I wouldn't use fiberglass batts if I were you. I would use either blown-in cellulose or blown-in fiberglass if you want the roof assembly to be vented, or spray foam if you want the roof assembly to be unvented. More information here: How to Build an Insulated Cathedral Ceiling.
