Complete Wall Assembly for Extreme Mountain Climate…No Spray Foam/OSB

Hi Everyone,
We are attempting to build a one level home in a pretty severe mountain climate.  We are less concerned about energy efficiency than we are about avoiding moisture(severely reactive to mold) and chemicals(specifically formaldehyde).  At one point we had an extensive wall assembly designed by a Safe Home Consultant, but we’re having difficulty getting anyone to actually build the darn thing, so we’re returning to the drawing board, and looking for suggestions that are ‘good enough and real world’ vs. perfect.  We cannot do spray foam, and will likely build with some combination of CDX plywood and rock wool.  With that in mind, what is a real world solution?  Do we need a rain screen?  Would something like the Huber Zip R Sheathing work, or would we potentially have issues from the OSB/foam chemicals?  Would love any suggestions.  Thank you very much!
