I suppose you could, but I wouldn't recommend it -- you're likely to spread the overspray into areas where you don't want it. The spray foam mix itself is too thick to get messed up by the blower door in terms of getting sucked into or out of small gaps, but the airborne mist overspray will move around.

Is there a good reference for a ventilation plan?

It’s not an apples to apples comparison but Aero barrier does it. :)

I don't think Aerobarrier is spray foam per se. I believe it's a latex product, and besides that the blower door getting the mist to blow around is kinda the point of the Aerobarrier process while I don't think you'd be getting much or even any advantage by depressurizing your house during a spray foam install.

Why would you want to run the blower door during install? To check the air sealing progress? Ventilation?
If you want to make sure you're getting a good air seal from the foam, I'd think a better approach would be to do a regular blower door test with smoke pencil, etc beforehand and mark off any leaky areas to make sure they get attention from your spray foam contractor.
If it's just ventilation, then a few box fans and open windows would be much more cost effective.
